Apple Pecan Muffins

After making blueberry muffins last weekend, I was really up for making another batch. That’s when I decided to try making some Apple Pecan Muffins. This recipe only made about nine muffins for me, but I wanted them to have the fancy muffins tops this time. If you only fill them 3/4 full, then, it will make a dozen muffins for you to enjoy. This is a great recipe with apple season upon us. My uncle has an apple orchard and makes the best apple cider! Sometimes I get lucky because my dad will freeze some gallon containers of it and save some for us when we visit. I haven’t seen any cider available at the farmer’s market in our neighborhood.

INGREDIENTS:
2 cups flour
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup apple juice
1/3 cup oil
1 egg
1 finely chopped apple
1/2 cup chopped pecans

DIRECTIONS:
Preheat oven to 400 degrees. Prepare your muffin pans with liners or grease. Beat the egg then add in the apple juice and oil. Mix together. Then, add salt, cinnamon, baking powder, sugar and flour until moistened. The mixture should be lumpy. Add in the pecans and apple until just mixed in. Fill up your muffin containers to desired level and bake for about 20 minutes until a toothpick comes out clean when inserted in the center. Let cool before eating.
